As far as baking goes, blueberry streusel muffins need a second go; I do not know if it is the blueberries I used, but there was something lacking in this recipe. I am a firm believer that small bleuberries have an abundance of flavor, while the larger blueberries seem to fall short; plus, the larger are too big to bake with. They did come out pretty though!
1/3 cup sugar Streusel topping:
1/4 cup butter, softened 1/2 cup sugar
2 1/3 cup flour 1/2 cup flour
1 egg 1/2 tsp cinnamon
4 tsp baking soda 1/4 cup butter
1/2 tsp salt
1 cup milk ( I used almond milk as usual)
1 tsp vanilla
1 1/2 cup blueberries
Preheat oven to 375 degrees
Cream together sugar and butter. Add egg, mix well. Combine flour, baking powder, and salt; add to crfeamed mixture alternately with milk. Stir in vanilla. Fold in blueberries.
In a small bowl, combine sugar, flour, and cinnamon. Cut in better until crumbly. Sprinkle over muffins. Bake for 25 to 30 minutes, Steusel topping will get a pretty brown color.
