Vanilla almond cupcakes with maple cream cheese frosting and a maple drizzle
1 cup cake flour
1/2 cup almond meal (I ground 1/2 cup of almond slices it worked the same and added a nice texture)
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter (I always soften the butter, for easier stirring)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup milk (I used almond milk)
Preheat oven to 400 degrees. Mix flour, almond meal, baking powder, and salt. Gradually beat in butter. Beat in sugar. Mix thoroughly. Beat in eggs and milk and mix well. Pour into lined cupcake tin and bake for 20 minutes or until golden brown.
Frosting
4 ounces cream cheese
1/2 butter softened
2 cups confectioner's sugar
1/4 cup maple syrup (do not use the overly sugary stuff. try going for straight maple syrup)
This is the easy part! Mix the ingredients with an electric mixer. Frost cupcakes when cool then drizzle maple syrup onto each. and Enjoy!
